Abstract: Objective To understand the pollution situation of harmful chemical substances in potatoes and their products,a specialty food in Qiqihaer City. Methods Collected 200 samples from January to September 2022,among which pesticide residues detected by quick easy cheap effective rugged safty(QuEChERS)-ultra high performance liquid chromatography-tandem mass spectrometry(UPLC-MS/MS) method and QuEChERS-gaschromatography-mass spectrometry(GC-MS) method, metals and metalloids detected by microwave digestion-inductively coupled plasma-mass spectrometry, and sulfur dioxide detected by titration method. The detection results were evaluated by relevant national food safety standards. Results Totally 11 pesticide residues were detected in fresh potatoes, and no pesticide residues were detected in potato products. 24 metal and metalloid elements were detected in fresh potatoes, while tin and mercury were not detected. Two fresh potatoes detected sulfur dioxide with a detection rate of 3.3%,and two samples exceeded the national standard limit with an exceeding rate of 3.3%. 19 out of 140 potato products were found to contain sulfur dioxide, with a detection rate of 13.6%. 8 cases exceeded the national standard limit, with a exceedance rate of 5.7%. Conclusion Fresh potato contamination was mainly introduced during storage and preservation, while the pollution of potato products was mainly caused by the use of additives in the production process. It is recommended that government departments strengthen supervision.
