Research progress of pollutant detection technology in milk based on nucleic acid aptamer

Abstract: The food safety issues have emerged one after anotherin recent years and the public is increasingly concerned about the safety of milk and its products.In order to ensure food safety and protect human health,convenient and rapid food testing techniques are needed to quantitatively detect contaminants in food. This paper reviews the application of traditional detection methods such as chromatography,spectroscopy,and electrochemical methods in the detection of food contaminant residues. On this basis,the paper focuses on the new detection method based on nucleic acid aptamer technology for multiple contaminants in milk,including antibiotics,heavy metals,aflatoxins,and melamine residues,to provide a reference for the development of diverse and convenient nucleic acid aptamer technology in the future.
