Research progress of rapid detection techniques of mycotoxin-producing fungi in food

Abstract: The most common mycotoxin-producing fungi in food are Aspergillus,Penicillium,Fusarium,Trichoderma,Cephalosporium and Trichothecium,etc. The mycotoxins produced by these mycotoxin-producing fungi pose serious harms to human and animal health,and also cause huge economic losses to agriculture. Direct detection of mycotoxin-producing fungi,rather than mycotoxins,can be more prospective to reduce the harm of mycotoxin-producing fungi to humans and animals. This article reviews the current rapid detection methods directly targeting toxigenic mold,including immunological methods,nucleic acid detection methods and matrix-assisted laser desorption/ionization time-of-flight mass spectrometry detection methods,in order to provide reference for the development of more rapid and accurate detection methods for mycotoxin-producing fungi.
