Investigation and health risk assessment of multi-elements in commercially available poultry meat in Shandong Province

Abstract: Objective To analyze the content levels of metal elements in commercially available poultry meat in Shandong Province,provide basic information and basis for the health risk assessment of commercial poultry meat in Shandong Province. Methods Totally 14 elements in commercially available poultry meat in Shandong Province were determined in 2022. The single factor pollution index and Nemerow comprehensive pollution index were used to evaluate the pollution of heavy metals in commercial poultry meat. Results There was a sample of commercially available poultry meat in Shandong Province with excessive Cr content,the over-standard rate was 0.63%,and the other elements met the requirements. The comprehensive pollution index value of heavy metal in poultry meat was 2.24,suggesting the moderate pollution. The commercially available poultry meat in Shandong Province had no obvious health risk to adults and children,but the maximum value of target hazard quotients(THQ) of adults and children in Jining City was greater than 1,which needs attention. Cr had the greatest potential risk in commercially available poultry meat in Shandong Province. Conclusion The pollution level of Cr in commercially available poultry meat sold Shandong Province is higher than that of other metals. Therefore,it is suggested that the heavy metals in poultry feed and drinking water should be detected from the source and Cr in poultry meat should be tracked continuously.
