2021—2022年上海市浦东新区市售淡水鱼中麻醉剂的残留状况及膳食暴露风险评估

Status and dietary exposure risk assessment of anesthetic residues in commercially available freshwater fish in Pudong New Area of Shanghai from 2021-2022

摘要: 目的 了解2021—2022年上海市浦东新区市售淡水鱼中麻醉剂残留状况,并评估膳食暴露风险。方法 2021—2022年随机采集市售淡水鱼57件,按照《国家食品污染和有害因素风险监测工作手册》中的标准程序检测4种麻醉剂残留,结合居民膳食摄入量,采用食品安全指数法评估市售淡水鱼中麻醉剂残留的膳食暴露风险。结果 2021—2022年浦东新区市售淡水鱼中麻醉剂残留总检出率为92.98%,超标率为3.51%。丁香酚的检出率最高(89.47%),淡水鱼中不同麻醉剂的检出率比较差异有统计学意义(P<0.01)。淡水鱼中丁香酚的平均膳食暴露量为1.27 μg/(kg·bw·d),最大膳食暴露量为30.25 μg/(kg·bw·d),丁香酚的最大食品安全指数为0.012 1。结论 2021—2022年上海市浦东新区市售淡水鱼中麻醉剂残留总体处于安全水平,但麻醉剂残留现象比较普遍,必须引起足够的重视,建议国家相关部门制定水产品中麻醉剂的使用规范。

Abstract: Objective To monitor the contamination status of anesthetic in commercially available freshwater fish in Pudong New Area of Shanghai from 2021 to 2022,assess the dietary exposure risk. Methods A total of 57 samples of commercially available freshwater fish were randomly collected from 2021 to 2022.The residues of four anesthetics were detected according to the standard operating procedure of the Manual for China National Food Contamination and Harmful Factors Risk Monitoring.Combined with the food intake data of residents,the dietary exposure risk of anesthetic in commercially available freshwater fish was assessed using the index of food safety. Results The total detection rate of anesthetic residues in commercially available freshwater fish in Pudong New Area was 92.98%,and the over-standard rate was 3.51% from 2021 to 2022.The detection rates of eugenol was the highest(89.47%).There was statistically significant difference on the detection rates of different anesthetics in freshwater fish(P<0.01).The average and maximum dietary exposure levels of eugenol from freshwater fish were 1.27 μg/(kg·bw·d) and 30.25 μg/(kg·bw·d) respectively. The maximum index of food safety of eugenol was 0.012 1. Conclusion The risk of anesthetic residues in commercially available freshwater fish in Pudong New Area of Shanghai from 2021 to 2022 is at a safe level on the whole,however,the phenomenon of anesthetic residues is relatively common and must be paid enough attention,so it is recommended that relevant national departments should formulate the standards of anesthetic in aquatic products.
