2023年上海市浦东新区市售食品中食源性致病菌病原谱分析

摘要:

目的 分析2023年上海市浦东新区市售食品中食源性致病菌的病原谱构成,为开展食品中食源性致病菌风险评估和预防控制提供科学依据。方法 2023年每个月在上海市浦东新区的6个监测点随机采集集贸市场、超市等地食品样品111份,依据GB 4789《食品安全国家标准食品微生物学检验》等检验方法对采集的样本进行沙门菌、产气荚膜梭菌和单核细胞增生李斯特菌等7种食源性致病菌检测和分析。结果 2023年上海市浦东新区市售食品中食源性致病菌污染率为29.80%(397/1 332),主要致病菌为副溶血性弧菌、单核细胞增生李斯特菌和产气荚膜梭菌。禽肉类食品污染程度最高(81/144,56.25%),其次为贝类(64/144,44.44%)和畜肉类(91/216,42.13%)。检出率的分布在不同月份间差异有统计学意义(χ2=60.411,P<0.01),6—9月致病菌的检出率明显高于其他月份;不同地点样品致病菌检出率比较,差异无统计学意义(χ2=10.406,P>0.05)。沙门菌优势血清型为肠炎沙门菌、伦敦沙门菌、鼠伤寒沙门菌和肯塔基沙门菌。结论 上海市浦东新区市售食品中食源性致病菌病原谱呈多样化,表明在食品流通环节中存在微生物控制薄弱环节,应继续加强对市售食品的监管力度,并持续监测致病菌谱动态,及时调整防控策略。针对高风险食品种类,应采取更为严格的监管措施,以减少致病菌的传播风险;加强公共卫生教育,以提升消费者对食源性致病菌的防范意识。

Abstract:

Objective To analyze the pathogenic spectrum of foodborne pathogenic bacteria in retail food products in Pudong New Area of Shanghai City in 2023,and provide scientific basis for risk assessment and prevention control of foodborne pathogens in food. Methods In 2023,a total of 111 food samples were systematically collected on a monthly basis from six designated surveillance sites within Pudong New Area of Shanghai City,encompassing markets and supermarkets. According to the GB 4789 "National Food Safety Standard for Microbiological Examination of Food" and other testing methods,the collected samples were tested and analyzed for seven foodborne pathogens including Salmonella,Clostridium perfringens,and Listeria monocytogenes. Results The contamination rate of foodborne pathogens in commercially available food in Pudong New Area of Shanghai City in 2023 was 29.80%(397/1 332). Vibrio parahaemolyticus,Listeria monocytogenes,and Clostridium perfringens were identified as the predominant pathogenic bacteria. Poultry meat was the most contaminated(81/144,56.25%),followed by shellfish(64/144, 44.44%) and livestock meat(91/216,42.13%). There were statistically significant differences in the distribution of detection rates among different months(χ2=60.411,P<0.01),with the detection rate of pathogenic bacteria from June to September being significantly higher than that in other months. However,no statistically significant difference was observed in detection rates of pathogenic bacteria across different sampling locations(χ2=10.406,P>0.05). The dominant serotypes of Salmonella were Salmonella Enteritidis, Salmonella London,Salmonella Typhimurium,and Salmonella Kentucky. Conclusion The contamination rate of foodborne pathogens in commercially available foods in Pudong New Area of Shanghai City is relatively high,with a diverse pathogen spectrum,indicating weak links in microbial control during the food distribution process. It is necessary to continue to strengthen the supervision of commercially available foods,persistently monitor the dynamic spectrum of pathogenic bacteria,and adjust prevention and control strategies in a timely manner. For high-risk food categories,stricter regulatory measures should be implemented to reduce the transmission risk of pathogens. Public health education must also be intensified to enhance consumers' awareness of preventing foodborne pathogens.
