基于Web of Science数据库的气相色谱-质谱联用技术在食品安全中应用的文献计量与可视化分析

Bibliometric and visualization analysis of the application of gas chromatography-mass spectrometry technology in food safety based on the Web of Science database

摘要:

目的 采用文献计量分析的方法对目前气相色谱-质谱(gas chromatography-mass,GC-MS)检测食品中有害物质的文献进行可视化分析,了解该研究领域的发展状况。方法 使用 R 4.4.1 中的 bibliometrix 程序包,Web of Science(WOS)核心数据库中所有GC-MS检测食品有害物质相关的研究文献,并对检索到的研究文献进行数据可视化分析,将GC-MS检测食品中有害物质相关文献的年发文量、国家、机构、作者、期刊以及关键词等信息进行统计分析并绘制可视化科学图谱。结果 总共筛选出422篇有关GC-MS检测食品中有害物质的研究文献,在WOS上检索到的相关研究最早发表于2009年,总体上相关发文量一直呈波动上升趋势,中国的发文量和被引量均位列第1位。期刊Food Chemistry的本地被引量居第1位,期刊Foods的发文量最多。全球被引量最多的作者是PRIMPKE S;发文最多的作者是NERIN C;发文最多的机构是波尔图大学(Universidade do Porto);以中国为首的各机构与欧洲各国及美国展开合作最为密切;排名前3位的高频词分别为食品(food)、鉴定(identification)和萃取(extraction)。结论 GC-MS方法检测食品中有害物质的研究热度仍呈现增长趋势,其中样品前处理方法是领域中十分重要的研究热点之一。

Abstract:

Objective To visualize the literature data on the detection of harmful substances in food by gas chromatography-mass spectrometry(GC-MS) by bibliometric analysis,and to understand the development status of this research field. Methods The bibliometrix package in R 4.4.1 was used to retrieve all research literature related to GC-MS detection of harmful substances in food from the Web of Science(WOS) core database. Data visualization analysis was performed on the retrieved research literature,statistical analysis was conducted on the annual publication volume,country,institution,author,journal,and keywords related to GC-MS detection of harmful substances in food,and a visual scientific map was then drawn. Results A total of 422 research papers on the detection of hazardous substances in food by GC-MS were screened. The earliest relevant study retrieved on WOS was published in 2009. Overall,the number of publications had shown a fluctuating upward trend,with China ranking first in both the number of publications and citation counts. The journal Food Chemistry was ranked first in local citations,andthe journal Foods had the largest number of publications. The most cited author in the world was PRIMPKE S,and the author with the most publications was NERIN C.The institution with the most publications was the Universidade do Porto. China-led institutions worked most closely with European countries and the United States. The top three high-frequency words were food,identification and extraction. Conclusion The research interest of GC-MS method for the detection of food harmful substances is still increasing,and sample preparation method is a very important research hotspot in the field.
