预包装食品钠含量现况及某医学院部分大学生对食盐认知情况调查

Current status of sodium content in prepackaged foods and survey on the awareness of salt among some college students in a medical college

摘要:

目的 了解新疆某医学院校内所售预包装食品营养标签中钠含量标示情况、大学生食盐认知情况和相关行为,为指导消费者健康饮食提供科学依据。方法 2023年4月通过方便抽样法,对新疆某医学院校超市内销售的预包装食品营养标签进行拍照,并依据国家标准对营养标签进行判定,同时采用整群随机抽样方法选取部分在校大学生作为调查对象,通过问卷星平台发放问卷进行食盐认知情况的问卷调查,并对数据进行分析。结果 本次研究纳入13大类共计1 220种预包装食品营养标签样品,其中1 195种样品标示了钠含量,其中低钠食品占32.4%、中纳和高钠食品占67.6%。调味品类整体钠含量最高,达2 260 mg/100 g,乳类及制品、饮料类和糖、蜜饯类钠含量整体较低,其中糖、蜜饯类钠含量最低,为20 mg/100 g。问卷调查分析中了解盐摄入过多对身体有害的有240人,占72.9%;在购买预包装食品时会查看营养标签的有163人,占49.5%;在购买预包装食品时关注营养标签中钠含量的有160人,占48.6%;认为很有必要标注预包装食品营养标签的有241人,占73.3%。不同性别的学生对“预包装食品是否应该标注钠含量”“如果摄盐情况不符合健康饮食是否会积极改变”和“此次调查是否会增加预包装食品钠含量重视度”等食盐饮食态度的比较,差异均有统计学意义(均P<0.05)。结论 新疆某医学院校内所售预包装食品的钠含量仍处于较高水平,应继续加强减钠(盐)工作的实施;部分大学生对于营养标签的认知及其相关营养知识较欠缺,需加强对预包装食品营养标签和高盐饮食危害的宣传力度,促进人群健康饮食。

Abstract:

Objective To understand the sodium content labeling of prepackaged food sold on campus at a medical college in Xinjiang,as well as the salt cognition and related behaviors of college students,in order to provide scientific basis for guiding consumers to eat healthily. Methods In April 2023,a convenience sampling method was used to take photos of the nutrition labels of prepackaged food sold in a supermarket at a medical university in Xinjiang. The nutrition labels were judged according to national standards. At the same time,a cluster random sampling method was used to select some college students as survey subjects. A questionnaire was distributed through the Wenjuanxing platform to investigate their salt awareness,and the data were analyzed. Results This study included 13 categories and a total of 1 220 pre-packaged food nutrition label samples,of which 1 195 samples indicated sodium content,with low-sodium foods accounted for 32.4%,and medium-sodium and high-sodium foods accounted for 67.6%. Among them,condiments had the highest overall sodium content,reaching 2 260 mg/100 g. The sodium content of dairy products and products,beverages,and sugar and candied fruits was generally low,among which sugar and candied fruits had the lowest sodium content,at 20 mg/100 g. In the questionnaire survey analysis,240 people(72.9%) understood that excessive salt intake is harmful to the body,163 people(49.5%) would check the nutrition label when purchasing pre-packaged food,160 people(48.6%) paid attention to the sodium content in the nutrition label,and 241 people(73.3%) thought it is necessary to label the nutrition label of pre-packaged food. There were statistically significant differences in the attitudes of students of different genders towards salt diet,such as "whether pre-packaged food should be labeled with sodium content","if the salt intake situation is not in line with a healthy diet,will it be actively changed",and "whether this survey will increase the attention paid to the sodium content of pre-packaged food"(all P<0.05). Conclusion The sodium content of prepackaged food sold in school at a medical college in Xinjiangis still at a high level,so we should continue to strengthen the implementation of sodium reduction (salt). College students lack knowledge about nutrition labels and related nutrition. It is necessary to strengthen the publicity of nutrition labels and high-salt diet hazards of prepackaged food to promote a healthy diet.
