2016—2023年太原市食品中致病菌污染状况调查

Investigation of pathogenic bacteria contamination in food in Taiyuan City from 2016 to 2023

摘要: 目的 了解太原市各类食品中致病菌的污染状况,为太原市及国家食品安全风险评估提供数据,为食源性疾病的防控提供科学依据。方法 随机抽取2016—2023年太原市10个县(市、区)的14类、2 842份食品进行检测,依据GB 4789.1—2016《食品安全国家标准 微生物检验方法标准》和《食品安全风险监测手册》,对样品中致病菌进行分离和鉴定。采用玻片凝集法对沙门菌进行血清分型。结果 共检出致病菌60株,总检出率2.11%,其中蜡样芽胞杆菌25株、副溶血性弧菌14株、沙门菌15株、单核增生李斯特菌4株和金黄色葡萄球菌2株。不同食品类别中,水产品检出致病菌19株、餐饮食品14株、肉及肉制品12株和婴幼儿类食品11株,检出率最高为水产品,检出率为5.11%;不同环节中,农贸市场检出29株、超市10株和外卖网店10株。部分致病菌菌落计数情况,1份样品中蜡样芽胞杆菌计数结果为15 000 CFU/g,其余9份样品计数结果为10~700 CFU/g。食品中分离出的15株沙门菌中鉴定出11种血清型,以肠炎沙门菌和伦敦沙门菌为主。结论 太原市市售食品中存在一定程度的致病菌污染。农贸市场、便利店与外卖网店致病菌检出率较高,需加强重点场所消毒和清洁工作,提高从业人员的卫生意识和操作规范,切实保障食品安全。

Abstract: Objective To understand the contamination status of pathogenic bacteria in various foods in Taiyuan City,provide data for food safety risk assessment in Taiyuan City and the country,and provide a scientific basis for the prevention and control of foodborne diseases. Methods Totally 2 842 samples of 14 kinds of food from 10 counties(cities,districts) in Taiyuan City from 2016 to 2023 were randomly collected and tested. The pathogenic bacteria in these samples were isolated and identified in accordance with GB 4789.1-2016 National Food Safety Standard for Microbiological Examination of Foodstuffs and the Food Safety Risk Monitoring Manual. The serotyping of Salmonella was performed by slide agglutination method. Results A total of 60 pathogenic bacteria were detected,with a detection rate of 2.11%. There were 25 strains of Bacillus cereus,14 strains of Vibrio parahaemolyticus,15 strains of Salmonella,4 strains of Listeria monocytogenes,and 2 strains of Staphylococcus aureus. Among different food categories,19 strains of pathogenic bacteria were found in aquatic products,14 strains were found in catering food,12 strains were found in meat and meat products,and 11 strains were found in infant food. The aquatic products had the highest detection rate of pathogenic bacteria at 5.11%. In different stages,29 strains were found in farmers' market,10 strains in supermarket and 10 strains in take-out online stores. The count of pathogenic bacterial colonies showed that the Bacillus cereus count in one sample was 15 000 CFU/g,while the counts in the other nine samples ranged from 10 to 700 CFU/g. From the 15 strains of Salmonella isolated from food,a total of 11 serotypes were identified,with Salmonella enteritidis and Salmonella London being the most common. Conclusion There is a certain degree of pathogenic bacteria contamination in the food sold in Taiyuan City.The detection rate of pathogenic bacteria in agricultural markets, convenience stores, and online food delivery stores is relatively high. It is necessary to strengthen disinfection and cleaning work in key places, improve the hygiene awareness and operating standards of practitioners, then effectively ensure food safety
